Program Overview

We created the Culinary Management (Integrated Learning) (H116) program to meet industry demand for highly skilled graduates with real-world kitchen experience who understand important culinary trends like the use of local foods, nutrition and the growing international influence. Students work toward a Culinary Management (Integrated Learning) diploma in four consecutive semesters. While this program is designed to deliver the same learning outcomes as Culinary Management (H100), your third and fourth semesters are integrated directly with industry.  

If you're self-motivated with a strong desire to increase your employability at graduation, this program is for you.

Here's what you'll learn:

  • First semester – Fundamental culinary skills and theories required to work in a modern kitchen and essential industry employability skills such as communications and mathematics for hospitality
  • Second semester – Advanced culinary skills and broadened food, wine and culinary culture knowledge; field placement preparation
  • Third semester – Participate in a residency at George Brown College operations, The Chefs' House restaurant or The Café, where you will work alongside emerging top talent while serving a public of discerning urban diners. This experience runs at the same time as in-class and online theory-based courses to support your learning and development.
  • Fourth semester – Participate in an integrated 14-week residency with one of our leading culinary and hospitality industry partners. This experience runs at the same time as online theory-based courses. Online asynchronous learning allows for either local or international placements.

Your Field Education Options
In the third semester, you will experience the culinary industry first-hand during your field placement at our state-of-the-art learning restaurant, The Chefs’ House, or at The Café.

In the fourth semester, you will complete your studies with an integrated 14-week industry mentor/externship at one of our leading culinary and hospitality industry partners, concurrent with online theory-based courses.

George Brown works with employers and industry partners to identify potential work experience opportunities. Students are also strongly encouraged to pursue self-directed industry work experience opportunities within Culinary Management they believe will provide the learning experiences they value and meet the program learning outcomes.

This valuable work experience can be added to your resumé. In addition to more formal on-the-job work experience, George Brown College endeavours to provide learning opportunities with real-world challenges and customers.

Program Learning Outcomes
The graduate has reliably demonstrated the ability to:

  • Provide advanced culinary planning, preparation and presentation for a variety of food service environments using a range of classical and contemporary techniques.
  • Apply basic and advanced food and bake science to food preparation to create the desired end product.
  • Contribute to and monitor adherence of others to the provision of a well-maintained kitchen environment and to the service of food and beverage products that are free from harmful bacteria or other contaminants, adhering to health, safety, sanitation and food-handling regulations.
  • Ensure the safe operation of the kitchen and all aspects of food preparation to promote healthy workspaces, responsible kitchen management and efficient use of resources.
  • Create menus that reflect knowledge of nutrition and food ingredients, promote general health and well-being, respond to a range of nutritional needs and preferences, and address modifications for special diets, food allergies and intolerances, as required.
  • Apply business principles and recognized industry costing and control practices to food service operations to manage and promote a fiscally responsible operation.
  • Apply knowledge of sustainability, ethical and local food sourcing, and food security to food preparation and kitchen management, recognizing the potential impacts on food production, consumer choice and operations within the food service industry.
  • Select and use technology, including contemporary kitchen equipment, for food production and promotion.
  • Perform effectively as a food and beverage preparation and service team member and contribute to the success of a food-service operation by applying self-management and interpersonal skills.
  • Develop strategies for continuous personal and professional learning to ensure currency with and responsiveness to emerging culinary techniques, regulations and practices in the foodservice industry.
  • Contribute to the development of marketing strategies that promote the successful operation of a food service business.
  • Contribute to the business management of a variety of food and beverage operations to foster an engaging work environment that reflects service excellence.

This award is available to all registered international students at George Brown College in any year of study for all programs in this category

Kimokran (Toronto) Scholarship for International Students

Kimokran 16 Toronto Inc. has donated funds for the establishment of the Kimokran (Toronto) Scholarship for International Students. This award is available to all registered international students at George Brown College who are in their 2nd Year or higher for all programs in this category

The following criteria must be met by the applicant:

Post-Secondary Scholarship for International Students - Certificate

The award is available to students in the Certificate, Post-grad program in any year of study.


The following criteria must be met by the applicant:

Post-Secondary Scholarship for International Students – Diploma/Degree

Academic Area has donated funds for the establishment of the Post-Secondary Scholarship for International Students. The award is available to students in the Diploma or Degree program in their Second, Third, or Fourth year of study in an approved international work/study experience.


The following criteria must be met by the applicant:

Scotiabank and the Scotiabank Bursaries

Scotiabank and the Scotiabank Bursaries have graciously provided $100,000 (100 bursaries at $1,000 each) for International students.

The following criteria must be met by the applicant:

  • Students must be registered in a full-time program
  • Students must demonstrate a financial need
Scotiabank International Partner Entrance Scholarships

The Scotiabank International Partner Entrance Scholarship is available to newly admitted students in their first year of study in any post-secondary (diploma, degree, or post-graduate certificate) George Brown College (GBC) program. Students from GBC’s academic partner institutions in the Caribbean, China, Central/South America and India are encouraged to apply.

Two scholarships of $5,000 will be awarded each academic year.


Qualifications

  • be an international student (required to have a valid Canadian Study Permit)
  • be studying in the first year of a full-time post-secondary program
  • possess an excellent academic record (3.0 cumulative GPA)
  • have demonstrated leadership in activities that have made contributions to the learning environment and participated in academic activities related to the area of study or student activities (e.g. clubs, Student Association, volunteer activities)
Woori Education Scholarship

Awarded to an international student based on academic performance and community involvement. To qualify, an applicant must:

  • be an international student with a valid Study Permit
  • be registered in a full-time diploma or degree program
  • have a minimum cumulative GPA of 3.3 in at least two full semesters of consecutive study
  • have participated in activities that have made a contribution to other students, their Department/School and/or the College community

George Brown offers entrance scholarships for eligible degree students based on academic achievement.

This is a renewable scholarship, which means that if you maintain a grade point average of 3.7 (80%) in your program, you will receive additional funding towards your tuition in future years.

Eligibility Requirements

  • You must meet the eligibility requirements for the scholarship at the time of your initial application and on Day 10 of the initial term of the scholarship.
  • Eligibility will be assessed by the Admissions department based on the grades used to determine the student’s admission score for the degree program. The student’s admission score, as calculated by the Admissions office, will be calculated to one decimal place.
  • Applicants with conditional offers of admission are required to meet the admissions conditions set out in your offer letter, or your offer and the scholarship could be revoked later.
  • You must be registered in, and complete, a full?time course load.
  • You must remain full-time in the program to be eligible for renewal.
  • Make sure to accept your offer and pay your tuition deposit by the deadline dates to receive this entrance scholarship.
  • Entrance scholarships are only eligible for the specific full-time degree program you've been accepted for and the entrance level/term on your offer letter.

For Fall 2025:

  • For the Fall 2025 semester, George Brown will be offering entrance scholarships for C305 degree completion students in their entry semester (Semester 5). These scholarships are for a total of $1200 (paid in two $600 installments-early in the fall and winter semesters after Day 10).*
  • This is a renewable scholarship, which means that if you remain enrolled in the Winter 2026 term (Semester 6), you will receive the additional $600 towards your Winter 2026 term tuition.
  • You do not need to apply for these scholarships. They will be credited to your GBC student account if you remain registered after Day 10 of each term.
  • These scholarships are offered to both domestic and international students.


To Qualify:

  • You must remain full-time in semester two to receive the second installment.
  • Make sure to accept your offer and pay your tuition deposit by the deadline dates to receive this entrance scholarship.
  • Prospects with conditional offers of admission are required to meet the admissions conditions set out in your offer letter, or your offer and the scholarship could be revoked later.
  • Entrance scholarships are only eligible for the specific full-time degree program that you've been accepted for and for the entrance level/term on your offer letter.
